Blackberries and ricotta make a perfect pairing, and this toast is made even better with the deep molasses sweetness of the brown sugar and crunchy pumpkin seeds.
This ricotta toast with blackberries, pumpkin seeds and brown sugar is a wonderful breakfast or snack option, but you could easily serve these on a little crostini or cracker for shmancy hors d’oeuvres for your next dinner party.
Let me tell you a story about blackberries. When I was growing up, my parents owned this piece of property up in the mountains. We used to get all excited about going up there because it was kind of like a secret getaway. There was a little cabin where we stayed, but we really spent most of our time outside. There was a creek running through the property, and in the hot months we used to set up chairs right by the water (we even attempted to put the chairs in the middle of the creek- bad idea). We splashed around playing in the water all day; who knows what kept us so occupied for so many hours. Looking back though, it was the perfect setting for our imaginations to run absolutely wild. Anyways, the whole property was basically covered by wild blackberry bushes. When blackberry season came, we’d all go out there with huge bowls, buckets, baskets, whatever we could find, and pick all the blackberries our little hearts desired. Blackberry bushes have thorns, so we’d have to be careful while harvesting. At the end of the day, we’d always discover little scratch marks all over our hands and arms, which we proudly showed off as battle scars. Those blackberries were absolutely divine- they were super plump and juicy, exceptionally sweet, and the natural taste of the berry was too amazing for words to describe. We probably consumed half the berries while picking them (one in the basket, one in my mouth). The rest of the blackberries were put to great use – blackberry jam, blackberry pie, blackberry pancakes, etc. Blackberries were definitely a top contender for the title of “Eunice’s favorite fruit” at that time. As we got older, we went less frequently to that place, but I still had such fond thoughts about blackberries. So, when we went to the grocery store, I’d buy blackberries expecting the same amazing taste experience, but was consistently disappointed. My love of blackberries slowly shifted and it came to a point where I actually would tell people I disliked them. Anyways, after a blackberry hiatus, I gave them a try again and my love for them started to develop once again. I am now a blackberry lover once again, am mildly obsessed with them, and slightly distraught by the toll it takes on my wallet. What a long and a relatively pointless story all to say that I love blackberries!
Back to the toast. Everything about this piece of toast is absolutely amazing. Fruity and juicy blackberries, creamy ricotta, nutty pumpkin seeds, molasses-y brown sugar – it’ll be a party in your mouth. Plus, for me, those blackberries really take me back to my childhood.

- 1 Slice of bread
- 1-2 tbsp ricotta cheese
- 2-3 tbsp blackberries
- 2-3 tsp pumpkin seeds
- 2-3 tsp brown sugar
- Toast your slice of bread to desired doneness.
- Spread ricotta cheese on the toast, and top with blackberries, pumpkin seeds and brown sugar.
- The measurements of ingredients are just a basic guideline and how much you use depends on your tastebuds, the size of your bread, etc.
