Easter Bunny Cupcakes

This adorably cute bunny cupcake is the perfect thing to throw together last minute for Easter (or any other event that you can bring a bunny cupcake to).

All you need is boxed cake mix, some frosting, coconut shreds (optional), marshmallows, and pink sugar sprinkles. I say coconut shreds are optional because it’s one of those things that people either love or hate. If you love them, carry on with the coconuts! If you hate them, you can forgo the coconut shreds and just use frosting instead. You won’t get the textured look, but it’s still cute!

The first step is to bake up a batch of your favorite cupcakes. Really any flavor is fine, but I chose Funfetti because sprinkles are always a good idea, especially for Easter. Another flavor I considered is coconut cream pie to match the decorations. While the cupcakes are cooling, make the frosting and bunny ears.

You can use any kind of frosting – I chose to make a simple buttercream, but feel free to use a swiss meringue, cream cheese, or anything you’d like. For the bunny ears, simply cut a regular-sized marshmallow on the diagonal with some scissors. Then dip the cut side in pink sugar sprinkles. If you want, you can use other Easter-themed colors too (pastel aqua or purple could be cute). Frost your cupcakes, cover the frosting in coconut shreds if you want, and add 2 ears to each cupcake. I decided not to add eyes or a tail because I like the simple look of just the ears (plus it’s less work!).

  1. Bake cupcakes according to directions on the box (or bake a batch of your favorite homemade cupcakes)
  2. Make frosting. Beat softened butter and vanilla until smooth using a hand mixer or stand mixer. Slowly add sugar to butter while mixing. Once butter and sugar are combined, add one teaspoon of milk at a time until desired consistency is reached.
  3. Make bunny ears. Cut 24 marshmallows on a diagonal with scissors. Dip the cut side in pink sugar sprinkles.
  4. Once cupcakes are cooled, frost cupcakes. Top frosted cupcakes with coconut shreds (optional) and place 2 ears in each cupcake. (If you choose not to use coconut shreds, simply place marshmallow ears directly into the frosting).
  5. Enjoy!
