I’m just going to put it out there – I LOVE BREAKFAST; it is amazing!!!!! If you know me at all, all this enthusiasm is not exaggerated! I love all the different breakfast options – from the simplicity of toast and eggs, oatmeal, or a smoothie to the all-out extravagance of gourmet pancakes, lox benedicts, stuffed french toast, etc. I love that you can eat breakfast at any time of the day, and it’s almost uncanny how well a nice cup of coffee pairs with all breakfast options. I am also a strict believer in “breakfast is the most important meal of the day”- fewer phrases are more true. That being said, I know most people would rather sleep in for that extra 10 minutes than make breakfast. That is why this recipe is great – you can definitely make it the night before, and have it ready to go in the morning! I can talk about breakfast ALL day, but I’ll spare you this time. Let’s get to this lovely coconut latte yogurt parfait!
This is a perfect little breakfast option that is a full of flavor, packed with nutrients that will keep you full, and has an added boost of caffeine energy! You can make it the night before, and it’s easy to take it on the go. Seriously, what else can you ask for? This little parfait takes the form of a basic parfait with layers of yogurt, bananas, granola, and chocolate chips. Here we go!
There are 2 layers of yogurt for this parfait: coconut and coffee. The other add-ins that I layer in are sliced bananas, granola, coconut shreds, and mini chocolate chips. This recipe serves 2 (or one hungry person). You’ll need 2 cups of yogurt, divided. You can use any yogurt of choice- I am a big fan of plain greek yogurt, but you can choose to use any plain yogurt, or even a sweetened vanilla if you want. If you choose unsweetened yogurt, you’ll want to add some sweetener. For the coconut layer, mix 1 cup yogurt, 1 tbsp coconut oil, and 1 heaping tbsp of sweetened coconut shreds. For the coffee layer, dissolve 1.5 tsp instant coffee granules in 2 tsp water, and mix to combine with the remaining 1 cup of yogurt. For both layers add desired amount and type of sweetener. I would recommend 3-4 tsp of agave for each yogurt layer, but you can use honey or white or brown sugar, and you can definitely adjust the amount to your taste buds.
Slice your bananas, and get the rest of your add-ins ready. Now for assembly! Place a single layer of bananas at the bottom of your parfait dish, then half of the coconut yogurt layer. Sprinkle granola, coconut shreds, and chocolate chips on top of the yogurt. Repeat with coffee layer – single layer of bananas, coffee yogurt, then granola, coconut shreds and chocolate chips. Repeat the whole process for the second parfait.
NOTE: If you’re going to make this the night before, I would wait to add the granola until the morning to avoid soggy granola (soggy granola is sad granola).
And there you have it! This little parfait is so nutritious – it has all the health benefits of yogurt (your digestive system will thank you), bananas (vitamins), and coconut oil (basically good for everything) layered up into a pretty little breakfast (or snack, or dessert!!) Then you have the coconutty flavor that is simply delightful, bundled with the coffee flavor, a definite breakfast must-have. Try the recipe out, and your afternoon self will thank you!
Ok, so here’s my YOGA DISCLAIMER: I don’t do yoga. I don’t claim to know anything about yoga. I don’t know proper form or hand/feet placement. I just look at pictures of amazing things people do on pinterest, and feel inclined to try it out myself- it’s probably pretty dangerous, especially because I’m prone to injury, so I probably shouldn’t do things like that…but I can’t help myself. And I shall continue to do so until I injure myself. Plus, I came up with the caption “yoga and yogurt,” so I basically was forced to do it! That is all. - 2 cups yogurt, divided
- 6-8 tsp sweetener*, divided
- 1 tbsp coconut oil
- 2 heaping tbsp sweetened coconut shreds, divided
- 1.5 tsp instant coffee granules
- 2 tsp water
- 2 bananas, sliced
- 1/4 cup granola
- 1/4 cup mini chocolate chips
- In one bowl, mix 1 cup yogurt, 3-4 tsp sweetener if using, coconut oil, and 1 heaping tbsp coconut shreds.
- In a separate bowl, dissolve instant coffee granules in water. Add remaining 1 cup yogurt and sweetener if using; mix until combined.
- To assemble one parfait. Place one layer of sliced bananas at the bottom of the dish. Then follow with 1/2 of your coconut yogurt, 1 tbsp granola, 1 tbsp chocolate chips, and another layer of bananas. Next, layer 1/2 coffee yogurt, and top with 1 tbsp granola, 1 tbsp chocolate chips.
- Repeat the above step to make your second parfait.
- * If you're using plain yogurt, you'll want to add some sweetener. If you're using already sweetened yogurt, you probably won't need additional sweetener.
