This incredibly scrumptious smoothie is packed with the nutritious goodness of cashews, naturally sweetened with dates, and perfectly flavored with a dash of cardamom.
Fact: smoothies are incredible things. I love the ease of making them (caters to my laziness) and the versatility of them (indulges my creative side). Who doesn’t want to throw things in a blender and call it a meal? Plus, when you’re not feeling so lazy, you can definitely put it in bowl, decorate it with all the toppings you want, and make a little treat for yourself. Some of my favorites I’ve done include caramelized banana smoothie and acai smoothie bowl.
Recently I’ve been looking into the whole paleo/whole 30 stuff. Not because I’d ever consider doing it (trust me, I wouldn’t be able to), but because I’m curious about it, and want to know what all the hubbub is about. Plus, my theory on dieting is learning about nutrition (that’s the research part), and incorporating different aspects into your own diet to cater to your specific needs. That’s when I came up with my sweet potato smoothie which I loved so much, I wanted to explore with different ingredients that still follow the rules for paleo/whole 30. We had a costco tub of cashews in the pantry, so I decided to use them in the smoothie even though caahews aren’t necessarily my favorite nut. But I gotta tell you, the flavor combination and the richness of the cashews just makes it incredible!
This smoothie is bulked up with cashews, which gives it a wonderfully nutty taste, but also makes it really filling and full of healthy fat. It’s also naturally sweetened with dates- no need for unnatural sweeteners here! My favorite part of this smoothie is the hint of cardamom. It gives it that chai flavor that makes it interesting enough to not be just a normal smoothie, but is subtle enough that it’s not overpowering by any means. I’ve read a couple recipes that use cashews as a smoothie base, and a lot of them soak the cashews and dates for a few hours prior to blending. I’ve tried both methods, and found that soaking it doesn’t make a huge difference, so I don’t take the extra time and effort to soak them. - 1 cup cashews
- 2 pitted dated
- 2 small bananas
- 3 cups ice
- 1/2-1 cup water
- 1/4 tsp cinnamon
- 1/4 tsp ground cardamom
- 1/2 tsp vanilla
- Place all ingredients in a blender, starting with only 1/2 cup of water.
- Add more water as needed to blend or to desired consistency.
